Tapenade recipe

Here is a good recipe typical of southern France and the Mediterranean area, quite easy to do and whose result is always popular for aperitifs with friends!

It is made of classic Mediterranean ingredients, olives, capers and anchovies, which are combined to make this flavoursome dip.

300 grams of black olives, preferably (but it can be done with green olives too)
150 grams of anchovy fillets in oil
150 grams of capers
1 tablespoon of mustard
½ lemon
Olive oil
Thyme powder
Pepper

Tip the garlic, lemon juice, capers and anchovy into a food processor and process for about 10 seconds. Add the olives and parsley and enough olive oil to make a paste. Add some mustard but not too much.

And now it’s ready!
Choose whether you prefer a rough or smooth textured finish and serve with bread.
